The cocoa bean, also known as cocoa or cacao, are the seeds of the cocoa tree (Theobroma cacao), which grows in tropical regions such as West Africa, Ghana and Ivory Coast. These beans are harvested directly from the large pods that grow on the trunk of the cocoa tree. Once harvested, the beans go through a series of processes – fermentation, drying, roasting and grinding – to bring out the rich flavors we associate with chocolate, and are sourced from cooperatives and producers in Ghana and Ivory Coast, who we represent for the market.

After the cocoa beans are cleaned, they are flavored by roasting at low temperatures. The shells are separated from the beans (the “meat” of the bean) in a process called grinding. The beans are finely ground into cocoa mass (also known as cocoa liquor), which is solid at room temperature. It is made ready for sale by the Ghanaian producer we represent.

First, the beans are harvested, shelled and cleaned. Raw cocoa beans can be alkalized at this stage, a process that affects the final properties of the cocoa powder. The beans (alkalized or not) are roasted to develop their aroma. The cocoa beans are then ground in a blade mill and then refined in a ball mill, and the cocoa powder is ready to be sold by our representative Ghanaian producer.
Reliable Production, Superior Quality in Cocoa Butter
Cocoa butter is extracted from the cocoa mass using mechanical extraction, one of the oldest and most common oil extraction processes. When it comes to cocoa butter production, the pressure used is as high as 550 kg/sqm. Mechanical extraction can usually be carried out using a screw press or a hydraulic press.The cocoa butter produced in Ghana is made ready for sale by the manufacturer we represent.
